Oregon Blueberry Skillet Slump

This traditional dessert uses fresh blueberries with biscuit dough dropped in and baked together.

For Filling:

  • 1 Quart Fresh Blueberries
  • ½ c. Sugar
  • ½ c. Water
  • 1 tsp. Lemon Zest
  • 1 T. Lemon juice
  • For Dumplings:

  • 1 c. Flour
  • 2 T. Sugar
  • 2 tsp. Baking Powder
  • ½ tsp. Salt
  • 1 T. Butter
  • ½ c. Milk

Instructions

  • Preheat oven to 400 degrees.  Using a 10” skillet or baking pan, combine filling ingredients in skillet and bring to a boil while stirring until thickened slightly. 
  • Combine dry dumpling ingredients, cut in cold butter and moisten with milk until a shaggy dough is formed.
  • Drop 6 portions of thick dumpling dough into simmering blueberry mixture.
  • Bake for 20 min or until golden brown.
  • Serve warm with vanilla ice cream if desired.
  • Makes 6 portions
