Ima Blueberry Muffins

2019 Ima Blueberry’s Muffin Contest at the Oregon State Fair
Ingredients

1 ½ c. all-purpose flour

¾ c. white sugar

½ tsp. salt
-
2 tsp. baking powder
-
½ tsp. cinnamon or pumpkin pie spice

1/3 c. vegetable oil
-
2 eggs
-
1/3 c. milk
-
1 c. fresh Oregon Blueberries

Crumb Topping:
-
½ c. white sugar
-
1/3 c. all-purpose flour
-
¼ c. butter, cubed
Instructions

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with muffin liners.

Combine 1 1/2 cups flour, 3/4 cup sugar, salt, baking powder and cinnamon. In a separate bowl, combine wet ingredients. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, and 1/4 cup butter. Mix with fork, and sprinkle over muffins before baking.

Bake for 20 to 25 minutes in the preheated oven, or until done (Phil says 23 minutes does the trick).

Once cooled, top each muffin with a dollop of whipped cream and a blueberry.
