Balsamic Oregon Blueberries with Whipped Feta

Looking for an easy yet stunning appetizer? Try this luscious whipped feta with balsamic Oregon blueberries, honey and lemon.

 

Ingredients

  • For the Balsamic Blueberries
  • 3 c. frozen Oregon blueberries 
  • 1 T. balsamic vinegar 
  • 1/4 c. honey 
  • 1 T. fresh squeezed lemon juice 
  • For the Whipped Feta
  • 8 oz. feta, crumbled
  • 4 oz. cream cheese
  • 2 T. olive oil
  • Fresh basil or mint (for garnish)
  • Balsamic glaze (optional)

Directions

  • For the Balsamic Blueberries
  • In a saucepan over medium heat, add frozen blueberries and bring them to a simmer. Continue to simmer for 13-15 minutes, until most of the juice has evaporated and the blueberries are thick enough to coat the back of a spoon. Remove from heat.
  • Add balsamic vinegar, lemon juice, and honey and gently stir until combined. 

  • For the Whipped Feta
  • In a food processor, combine the crumbled feta, cream cheese, and olive oil.
  • Process until smooth and creamy, scraping down the sides as needed.

To Assemble:

  • Spread the whipped feta onto a serving plate or in a bowl, creating a swirl with the back of a spoon.
  • Spoon the Balsamic Oregon Blueberries over the whipped feta, drizzle with additional balsamic glaze (optional) and top with fresh basil or mint. 
  • Serve with crackers, toast, or pita bread and enjoy!
