Blueberry Coconut Milk Ice Pops

Sweet summer blueberries pair deliciously with coconut milk in these fun and refreshing Blueberry Coconut Milk Ice Pops. The end result is a dairy-free, creamy, blueberry filled popsicle that is sure to quench the summer heat.


  • 3 cups fresh blueberries

  • 1 15-ounce can whole fat coconut milk

  • 4 ounces sweetened condensed coconut milk

  • 1 teaspoon vanilla


  • In a blender or food processor add the blueberries, coconut milk, sweetened condensed coconut milk and vanilla until thoroughly combined.

  • Add the mixture to popsicle molds with popsicle sticks and freeze for at least 24 hours. To serve, take them out of the freezer a few minutes prior to serving.

Makes 8-10 Popsicles
