Oregon Blueberry Kale Salad with Oregon Blueberry Poppy Seed Dressing

Fresh, delicious and loaded with good for you ingredients.

Kale Salad

  • 8 oz. kale, stems removed and chopped into bite-sized pieces 
  • 1 1/2 c. fresh blueberries
  • 1/2 c. walnuts 
  • 1/2 red onion, thinly sliced
  • 1/2 c. feta cheese

Directions:

  • Mix all ingredients in a large bowl, toss with Oregon Blueberry Poppyseed Dressing and enjoy

    Poppy Seed Dressing

  • 2 c. fresh blueberries 
  • 1/3 c. orange juice
  • 1/3 c. olive oil 
  • 1/3 c. red wine vinegar 
  • 1/4 c. honey 
  • 1/4 tsp. salt 
  • 2 tsp. poppy seeds


Directions:

  • Add blueberries, orange juice, honey, red wine vinegar, and salt to a blender or food processor. Blend until well combined.
  • Slowly blend in the olive oil until just combined. Taste and add more salt or honey as desired.
  • Pour into a mason jar, add the poppy seeds, cover and shake to combine.
  • Store in the refrigerator and use within one week.
